I need some guidance, bought used prairie want to make sure I’m adjusting right screw on carbs, if that’s the problem. It only has 140 hours and 640 miles , it will sometimes accelerate wide open in neutral other times hesitates and then will go wide open perfectly fine , now if I go ride it and hit it will spin the tires an take off until about 30 then dies right down if I pop open one lock on air filter it will go faster but only about 40ish

I'd start with removing the carbs and cleaning them. Make sure the slides move smoothly up and down and there's no tears in the vacuum diaphragms. Also check the float height; it could be starving for fuel at the top end if the floats are set too low.

Here's a factory repair guide that's still out of the web if needed for reference. I believe the Prairie 700 carbs are the same as the KFX 700:
