Doing a tune up on a 05 750. runs fine at idle then falls off at mid and pulls hard on top. All stock except k&n air filter. Cleaned the carbs, removed juts and blew them out with compressed air and clear to see through them. Guy says it has always been like this since new. Was going to shim the needles but wonder if the shims from a dyno jet kit would work or too thick or thin? The bog gets worse when air box lid off. When i apply a little choke with lid on it goes away.

Try the Dyno Jet shims. Or just use some #4 washers from a hardware store. One #4 washer under each needle should do the trick.

If you are going to put the shims under the clip on the needles then it will get worse. Your issue is too rich.

Get some adjustable needles or a complete jet kit the weaker diaphragm springs will help in acceleration too.

Taking the lid off is making unable to meter fuel right these are vacuum carbs and they need some vacuum to work properly.

Save yourself some time and just do this. You answered your own question; added more air - ran worse. Added more fuel (choke) - ran better.
These Kawi V-Twins are ALL are lean from the factory; adding the K&N was enough to put it over the edge.
Stay away from the Dyno Jet kits, although the needles can be used along with Keihin jets for decent results on modded engines. 'Nuff said.
